When fresh garlic is cut or crushed, an amino acid, alliin combines with an enzyme, allinase, starting a chemical reaction that forms a compound called allicin. Allicin is considered the “mother” substance of garlic as it is responsible for a majority of the curative and preventative properties associated with garlic.
